Fall was about 3 days long in Michigan this year. The classic food of fall is pumpkin. Pumpkin lattes, pumpkin bread and, of course, pumpkin pie. This pumpkin soufflé is a healthy, crustless pumpkin pie that my family loves so much we keep the ingredients on hand at all times. It’s super simple and you can add the sweetener of your choice.
- High in vitamin A. Vitamin A is great for your skin, eyes, teeth and immune system. Vitamin A is a powerful anti-viral and antioxidant. Antioxidants can protect you against cancer and tissue damage. Antioxidants can also keep your LDL cholesterol from getting sticky which can cause heart disease.
- High in fiber and grain-free. Many of my patients find they feel better staying away from grains. Pumpkin is a great alternative for making you feel full when you are avoiding grains.
- Easy on the gut. Pumpkin is easy to digest and is often a safe food for many people with gut issues.
