Asian Immune-Boosting Soup


I’m Jewish. On Christmas, my family, and many other Jewish families, would indulge in Chinese food. We would have it other times as well but on Christmas it was special. We appreciated the owners of these restaurants since we didn’t have to brave the long lines at the grocery stores the days before Christmas to prepare meals or on the day of Christmas when they were the only places open.

Easiest Soup Ever

In honor of this wonderful culture, I wanted to share one of my favorite soup recipes. It couldn’t be easier to make and only has a handful of ingredients.

  • Broth (homemade or one carton of vegetable, beef or chicken)
  • Bok Choy (chopped)
  • Scallions (Chopped, the whites cooking with the soup and the greens to be added at the end)
  • Mushrooms (sliced)
  • Ginger (chopped or grated)
  • Garlic (minced)
  • Sea Salt and Pepper to taste

I just throw all of it except the scallion greens into a pressure cooker or instant pot. Bring it to steam and take it off the heat. When the pressure is off, add the scallion greens and it’s ready.

Immune-Boosting and Anti-Inflammatory

Ginger is a great anti-inflammatory. It’s wonderful for the gut and helps with nausea. Garlic is a great immune booster and anti-viral. Perfect for the season of sniffles.

Use as much garlic and ginger as you like. The more garlic, the more immune-boosting but also repels other humans so use at your own risk. Download the recipe here.
