Meatloaf Gets a Bad Reputation
Personally, I think it’s the loaf part. I don’t remember growing up eating meatloaf but It’s one of my family’s favorite foods. Some people like ketchup on their meatloaf but there is a special place in my heart for barbecue sauce, so that is what I use. Try to find a barbecue sauce with a low carb count or make your own, substituting the sugar with erythritol, monk fruit or stevia. You may have noticed that I try to keep recipes low carb. This recipe is no exception. We substituted riced cauliflower for the bread crumbs and you won’t even notice the difference. Really, trust me. We kept the comfort of meatloaf without the gluten or the extra carbs. Win!
Eating Low Carb Has Many Benefits
Eating low carb can help prevent brain fog, fatigue, weight gain, insulin resistance, diabetes, Alzheimer’s disease and more. You will notice that as long as you continue to eat healthy fats such as avocado, coconut oil, and olives, you will avoid hunger pangs and cravings. Quick Tips For A Fast Meal
To make the recipe even easier. You can find Mirepoix (a mix of carrots, celery, and onion) and riced cauliflower in the veggie aisle of Trader Joe’s. You know how I love Trader Joe’s!! Just throw those in with the rest of the ingredients and, with the exception of the parsley, you get to avoid chopping vegetables. It is super quick to throw together and a great veggie-ful meal. For my vegetarian friends, you can even replace the meat with chopped up mushrooms.
